Eggless Cherry Tiramisu : A farewell to cherry season

Before the cherry season comes to an end, why not make this eggless cherry tiramisu! its light, indulgent, eggless and so easy to make! This dessert combines the richness of traditional tiramisu with the vibrant, sweet burst of fresh cherries, creating a symphony of flavours that dance on your taste buds. Every bite of this tiramisu has coffee soaked sponge, homemade cherry preserve and whipped vanilla bean mascarpone, okay and lets not forget the chocolate shavings and chocolate crunch between the layers, oh-la-la! Eggless Cherry Tiramisu

Prep time: 30 minutes

Rest time: 5 hours

Total time: 5 hours, 30 minutes


Ingredients:

For the Cherry Preserve

1 cup fresh cherries, pitted and halved

1/4 cup granulated sugar

1/2 Tbsp vanilla extract

For the Coffee Soak

1 cup strong brewed coffee, cooled

For the Mascarpone Filling

8 ounces mascarpone cheese, softened

1/2 cup powdered sugar

1 Tbsp vanilla bean paste

1 cup heavy cream

For Layering:

1 package (about 24) ladyfingers

Chocolate shavings (for garnish)

2 Tbsp Chocolate crunch

Cocoa powder


Directions:

1. Prepare the Cherry Preserve:

In a saucepan, combine the fresh cherries, granulated sugar, and vanilla extract.

Cook over medium/high heat, stirring occasionally, until the cherries soften and release their juices. This will take about 5-10 minutes. Remove from heat and let the cherry preserve cool completely.


2. Prepare the Coffee Soak:

In a shallow bowl, add coffee beans and hot water and let it cool, set aside.


3. Prepare the Mascarpone Filling:

In a mixing bowl, beat the softened mascarpone cheese until smooth. Add the powdered sugar and vanilla bean paste and continue to beat until well combined. Add the heavy cream and whip until stiff peaks form. Be careful not to over-mix.


4. Assemble the Tiramisu:

Quickly dip each ladyfinger into the coffee soak mixture, ensuring they are soaked but not soggy. Arrange a layer of soaked ladyfingers at the bottom of your serving dish. Spread half of the mascarpone filling over the ladyfingers. Spoon half of the cherry preserve over the mascarpone layer, chocolate crunch. Repeat the process with another layer of soaked ladyfingers, mascarpone filling and cocoa powder. Cover the dish and refrigerate for at least 3 hours, or overnight, to allow the flavors to meld and the tiramisu to set.


5. Garnish and Serve:

Before serving, garnish the tiramisu with chocolate shavings and dollops of cherry preserve. Enjoy your delicious Eggless Cherry Tiramisu!
